How to feed daily

When to feed

Once a day, roughly the same time. Feed when it has fallen back from its peak.

How to feed

Discard most of the starter, keep about 20-30g. Add equal parts flour and water (1:1:1 ratio by weight).

What to expect

It should roughly double in 4-6 hours at room temperature (22-24C). Active bubbles throughout means it's healthy.

Before a bake

Feed 4-6 hours before you need it. Use it when it's at or near its peak — domed, bubbly, and passing the float test.
